Maple Glazed Sockeye Salmon

Serves: 2
Ingredients:
2 Sockeye Salmon fillets, skin on
3 tbsp maple syrup
2 tbsp soy sauce
1 tbsp fresh ginger, peeled & grated
Sea salt
Freshly ground black pepper
Instructions:
- Preheat the oven to 200°C degrees.
- In a small bowl whisk together the maple syrup, soy sauce, ginger, salt & pepper.
- Line a baking dish with foil, ensuring the edges are covered so the glaze doesn’t spill. Brush the foil with olive oil and place the Sockeye Salmon skin side down.
- Pour the glaze mixture evenly over the fillets.
- Bake the Sockeye Salmon uncovered for 15 minutes, then remove from the oven and coat the fillets with glaze from the dish.
- Cook for an additional 5 minutes or until the Sockeye Salmon flakes easily with a fork.
Serve with your choice of greens and fresh lemon.
For maximum flavour, marinate fillets in the glaze for several hours before baking.
