Smoked Salmon on Crackers with Pickled Onions

Ingredients:
1 small red onion, thinly sliced into rings
1 tbsp apple cider vinegar
25 crackers
½ cup spreadable cream cheese
250 g COOKE Natural Smoked Salmon
Capers and dill, to serve
Instructions:
- Combine onion and vinegar in a small bowl and set aside for 20 minutes, tossing occasionally.
- When ready for serving, spread each cracker with some cream cheese, top with smoked salmon slices, pickled onion, capers and dill. Enjoy immediately.
Tip: keep any remaining onions in a sealed container in the fridge for later use.
Note: A 250g salmon would be enough for 25 crackers, based on 50g per serving this will serve 5.
